Night of Accomplishments

I spent most of the day being lazy and uninspired. Didn't do much besides blog hopping and playing with baby boy. When I came home from picking up Jboy from golf practice I was feeling too lazy to make dinner. Then all of a sudden I got up,  oiled my pan and just got started. Boy was that the best thing ever! In less than 20 mins I had a delicious dinner for less than the cost of pizza. I made the shrimp dinner that was on the meal plan but I had to do some improvising. I only had one zucchini left and no cherry tomatoes. So, I gave myself permission to get creative. I added mushrooms, roma tomatoes, onions, and half a red pepper. All free foods on the WW plus point system. I sauteed them a bit then added some white cooking wine and shrimp. I served this delicious concoction on top of spaghetti with some bread and a caesar salad that Jboy prepared.  So much yumminess for very little points. I even had points left over to enjoy dinner with a glass of red wine and two small scoops of ice cream for dessert. So kudos to me for not calling out for pizza.
This yummy dinner led to many more accomplishments. Baby boy has been doing pretty good with peeing but the other one not so much, until tonight when he went all by himself, no prompting needed!! I was so very proud of him! Jboy took on kitchen duty all by himself and did an awesome job. And Gboy, with a little help from me, is completing his very first multi page school report. Aaaah my babies are getting so big.

Yummy Day

So much fun today! I love those Monday Holidays. We went out bike riding again but this time we wanted to try out geocaching. We live in an area that allows us to safely ride our bikes to a huge park with a very long bike route. It is also surrounded by a lot of undeveloped areas. Which just happen to be prime geocache hiding spots! There were about 7 different caches within a mile of our home. Lucky us! We tracked down two.  After noticing babyboy asleep in his little bike trailer, we decided to head off to the park for lunch. I packed some homemade subs, oranges, and popcorn for lunch. After lunch we played in the playground and ball tag. We also managed to fly the kite. It didn't go very high, but it went up and the boys thought that was cool.  Came home and made that citrus chicken. MMM yummy! we served it with salad and black bean salsa. It reminded me of Chilis' margarita chicken, only much better! Definitely going on our fave list.

Meal Plan Monday

Yay!! I love long weekends. February sure has been a treat. The boys have had more days off school than in school! woohoo! We will be out of town this weekend so this is a short week for menu planning.   I started doing Weight Watchers so I have included plus points for some of the meals. I calculated the points using etools recipe builder.  If you have any questions please feel free to ask.

Weekly review

Time flies when you have kids. The days just kinda passed slowly by before the boys. Now it seems like in a blink of an eye an entire year passes. It is insane how big the boys are getting. Everyday they seem taller, smarter, different. It seems like ions ago that they were itty bitty.  I am so blessed to have them in my life. 

This week we were back on schedule, kinda. Abis (that's what baby boy calls Grandma) was still in town. We spent most of the week taking her to doctor's appointments and labs. We were very relieved to learn that her heart is in good shape and that her blood pressure is finally under control. Woohoo!! 

The boys went back to their regular afterschool activities. Gboy and Jboy signed up for soccer, neither wanted to do baseball this season. I thought about registering baby boy but I think I will wait until next season.  

We have really enjoyed time outdoors lately thanks to some great weather.  Except for today, it was really windy and any outdoor activity would have resulted in lots and lots of runny noses and itchy eyes. So we stayed in watching movies instead. Luv it when i get to cuddle my boys all day long.

Funny things my kids say

Everyday before we eat dinner, we hold hands and say grace. Usually its either of the older boys who lead us in prayer. Today, because I was tired from waking up at 5 to pick up my mom from her sleep study, I asked the baby to lead us. He began by closing his eyes then quietly trying to repeat what his brothers usually say. Then he says, Knock knock... Amen. too funny! He has been on a knock knock joke streak lately. My favorite,  knock knock...who's there? Love..Love who? Love you Mama...
Thank You God for blessing with daily smiles from the boys.

Weekly Menu

We missed out on two of the meals last week. Mostly because of too many leftovers.  So I will just have to arrange those two meals for this week. So here is our menu for the week.

Breakfast: breakfast burritos, homemade Mcmuffins, oatmeal, and smoothies
Lunch
Mon: chicken nuggets w/salad and fruit
Tues: pizza, veggie sticks
Wed: tuna salad w/crackers and fruit
Thurs: at school
Friday: no school
Dinner
Mon: Moraccan fish w/brown rice (didn't make it last week)
Tues: crockpot bbq chicken, mashed potatoes and carrots spaghetti and salad
Wed: Sautéed Shrimp and Zucchini spaghetti and salad
Thurs: Chicken w/mushroom, brown rice w/veggies and salad
Fri: Red enhiladas, rice, beans and salad
Sat: out of town

Weekly Review

What a busy week! My mom has been staying with us since the beginning of the month so I can take her to various appointments with various doctors. On Monday we had parent/teacher conferences. I am really proud of the boys. They are very smart. I think they take after me (hehehe).  Tuesday we skipped trumpet/guitar lessons because I was too lazy to take them,  of the freeze warning. Wednesday we went to golf lessons only to find that they had been cancelled. That's what happens when it gets cold around here.  Thursday my in laws came to town. They got here late so we all we did was have dinner at home then go mimis (to sleep).  On Friday my sister in law went for an interview (she did awesome!) then came home. I made some chilaquiles that were so freakin hot, the only one who could eat them was my Father in law. He even asked for seconds!! oh yeah, woohoo, score one for me! They enjoyed the chile so much, they asked if I could take them to go buy some. So we did. After that we took them to a wildlife refuge so they could see the wildlife. We had dinner then they drove home. Saturday I went to my WW meeting (4lbs woohoo) then took my mom antique-ing while the boys went to play golf. We met up at the park/zoo to have lunch. After that we came home to play Just Dance on the Wii. Too fun! for me, the boys not that into it, but i think that's only because they had a friend over, and what cool 11& 10 yr old dances with their mom!! I really enjoyed this week. Love my life!! Thank you God!

Inspection

Have you ever decided to clean your house as if it were about to go through a military type inspection? I did, today. I cleaned carpets, scrubbed counters, organized drawers, cleaned out cabinets, and washed anything that wasn't moving. Crazy?? Maybe a little, but just every once in a while. I don't usually get all OCD, just a little.  I guess it was also due to the boys being home all last week and the beginning of this week. I love having them here. They are a blast and we had tons of fun during snow days. But, once they go back to school I feel a need to clean everything. It kinda helps get me back on schedule. I need to remember to take pics. I forget I have a blog now. That reminds me, since part of the reason I started this blog was to document what is going on in our lives. I am going to try to do a weekly round up on Saturdays. Hopefully with pics.

Breakfast:  Nutella Crepes (I substituted half the flour with whole wheat and filled the crepes with nutella and sliced bananas) Super Yummy!!
Lunch:  warm overs (my hubby doesn't like the term leftover)
Dinner:  Chile Colorado (if you want the recipe tell me in comments and I will email it to you), white rice and beans
Tuesday
Breakfast:  egg cheese burrito
Lunch:  school
Dinner:  Crockpot bbq Chicken, mashed potatoes, salad
Wednesday
Breakfast:  oatmeal w/mini bagel
Lunch:  Chicken noodle soup crackers and laughing cow
Dinner: spinach lasagna w/salad
Thursday
Breakfast:  Blender pancakes
Lunch:  school
Dinner:  caldo de pollo c/arroz (chicken soup w/rice) guacamole and salsa
Friday
Breakfast: eggs w/nopales (cactus leaves) and beans
Lunch:  ham and veggie wraps, grapes & banana cream pie
Dinner: Spanish Moroccan Fish (i omit the garbanzo beans) brown rice & salad
Saturday & Sunday
We will have out of town guests, still not sure what we will be doing.

Catching up

Last few days have been busy ones. With the baby sick, I had to skip our skiing trip Saturday. I keep calling it a skiing trip when in all reality it was a snowboarding trip. But I'm old school and snowboarding is just too long a word. Anyway the boys came back with wonderful stories of their first time out there. I'm so sorry I missed it. I am sure it would have been a blast to go down the slopes with them. Oh well, hopefully we will be able to do it again before the season is over. On Sunday we went bike riding to the park. We played on the playground, we through a few passes, played ball tag and were introduced to frisbee golf. Overall a very good time. Next time I will have to bring my camera so I can snap a few pics of the boys playing. They are so much fun. Thank you God!  Monday started off as a beautiful day. I took the baby to the zoo and the park. Our zoo/park has one of those old red, white, and blue rocket ship slides. I was scared to let the baby go by himself, so I ended it up climbing and sliding down with him. He kept saying "Mama you silly" then giggling all the way down. We would have stayed at the park longer but the weather started changing, by bedtime it was clear the next day would be a snow day. Crazy right?? we went from 70 to -15 in a matter of days. The good thing is the boys have been home from school. We have been keeping busy with the wii, movies and books. Tomorrow we are planning a puppet show for the baby. We will see how that goes.
